Cheesy Chicken Pasta

Ingredients for Cheesy Chicken Pasta

400 g farfalle

2 chicken breasts

2 eggplants 1 onion

30 g grated Parmesan cheese 1 tablespoon

tablespoon olive oil 1 tablespoon

chopped parsley
salt, pepper

Boil a pot of salted water. Let cook the farfalle for 10 min then drain and rinse under cold water. Book. Wash the eggplants and cut into small dice. Meanwhile, cut chicken breasts into strips, add the onion to the pan and let them brown. Add the diced eggplant. Season and cook over low heat 20 minutes. Mix pasta with preparing chicken / eggplant. In a baking dish, pour then sprinkle with Parmesan Bake and let brown about 10 min.
Peel and chop onion. In a skillet, heat 1 tbsp tablespoons oil and fry the onions a few minutes. Preheat oven grill position.
Serve sprinkled with parsley washed and chopped.
