Ingredients for Cheesy Chicken Pasta
400 g farfalle
2 chicken breasts
2 eggplants 1 onion
30 g grated Parmesan cheese 1 tablespoon
tablespoon olive oil 1 tablespoon
Boil a pot of salted water. Let cook the farfalle for 10 min then drain and rinse under cold water. Book. Wash the eggplants and cut into small dice.
| Peel and chop onion. | In a skillet, heat 1 tbsp tablespoons oil and fry the onions a few minutes. | Meanwhile, cut chicken breasts into strips, add the onion to the pan and let them brown. Add the diced eggplant. Season and cook over low heat 20 minutes. Preheat oven grill position. | Mix pasta with preparing chicken / eggplant.
