Koulitch perfumed with rum raisin and nut

This year Orthodox Easter Day falls on Sunday, April 4. For this occasion, as every year I will prepare a traditional Easter cake called the Russian "Koulitch. It is prepared several days in advance. This cake is very similar to raisin buns. It is a rich cake flour and butter. The dough is prepared with the yeast that causes it to swell. I especially love this cake because it reminds me of my childhood when my paternal grandmother has prepared him for the whole family. Unfortunately I could not get her recipe. By cons, my maternal grandmother was thrilled to share her recipe with me in it. Since I am his recipe to the letter and my "koulitch" are successful: they are aerated, moist and well flavored. I love the smell of koulitch who cooked in the oven. If the recipe for this wonderful Russian cake tempts you, here are the necessary ingredients and steps to achieve this cake!

Preparation time: 20 minutes
Raising dough: 2h
Time of cooking: 45 minutes
You get 2 cakes.
Each cake is for 6-8 people.

You need: 4 cups


flour 0.5 cup sugar 4 eggs

200g of butter softened
1 packet of vanilla sugar
A little
salt 25 g fresh baker's yeast (real live yeast that raises the dough) - Large, radius bread.
0.5 liter of warm milk + 2 tablespoons milk (for yeast desoldering y)
a good tablespoon of extra virgin olive oil (preferably oil in good quality)
a handful of raisins ( 200 -250 gr) and nuts (50-100 g): it depends on your needs and preferences
3-4 tablespoons white rum or brown (to soak the raisins)

Dough:

Combine ingredients in a large bowl / bowl in the following order:
1. Eggs with sugar, salt + vanilla sugar

2. Milk (make it warm in the microwave to make it warm)

3. Flour

4. Mix well the yeast in 2 tablespoons of milk to avoid lumps

5. Olive oil

Once the dough made, put the mixture into a protected location, close with a cloth and let stand for 1 h. Let rise until doubled in volume.
1h later, knead the dough and let stand 1 or 2 hours.

Soak raisins in rum for the dough rises. Then drain.

Add raisins and nuts into batter. Mix.

Preheat oven to 180C.

Butter the cake pan y have the dough and bake for 45 minutes.

You get 2 good Kulish with this amount of dough.

Kulish also be eaten with jam or plain. I prefer to eat it with jam pudding: it's a real treat.

If you do not pan Kulish, you can use a cake pan or mold quite high because the dough will swell above the mold during cuisson.

Kulich with rum flavored raisins and walnuts



Orthodox Easter is coming soon. This year it will be celebrated on April, the 4th. As each year I am going to bake traditional Russian Easter cake called “Kulich”. Traditionally the cake is prepared 1 or 2 days ahead as well as eggs painting. It is the most awaited Easter dish. When I was a little girl I could hardly wait for Easter morning when you are allowed to eat “Kulich” and crash Easter eggs. Kulich is a rich, sweet bread which is baked in a tall mold and decorated with white sugar icing and candy sprinkles. I particularly love this cake. I love making it and I love eating it. Its taste and smell take me back to my childhood when my grandma Klavdiya (my dad’s mom) made it for the whole family. Unfortunately when my grandma Klavdiya was alive, I didn’t ask her for the recipe. But my grandmom Galina (my mom’s mom) was happy to share with me her recipe of kulich. Since that time I closely follow her recipe and my kulich turned to be fluffy, moist and flavored. What I love about it ? While the cake is baking, it fills the house with a dreamy heavenly cake smell. If you want to give a try to this wonderful Easter cake, follow my instructions!



Preparation time: 20 minutes

Dough preparation: 2 hours

Cooking time: 45 minutes

You’ll get 2 cakes: each cake serves 6-8.



You’ll need :

4 cups of all-purpose flour (1 cup=250 ml)

½ cup of sugar

4 eggs

200 gr of unsalted butter, softened

2 tablespoons of vanilla sugar

A pinch of salt

25 gr of fast rising fresh yeast

½ cup of lukewarm milk + 2 tablespoons of milk for dissolving fresh yeast in it

1 tablespoon of good olive oil

200-250 gr of raisins

50-100 gr of walnuts

4 tablespoons of rum of your choice



Combine the ingredients in the following order to make dough.

1. Eggs with sugar, vanilla sugar and salt

2. Add milk

3. Incorporate flour

4. Dissolve yeast in 2 tablespoons of warm milk

5. Add olive oil



When all ingredients are combined, knead dough until soft and slightly sticky.



Form a ball and put it into a large bowl. Cover with wet towel.



Let it rest for 1 hour in a warm place. It will rise and double its volume.



Knead the dough again for about 10-15 minutes, pounding it against the table occasionally. The more you knead, the more airy the dough.



Let it rest for another 1 hour.



In the meantime, place rum and raisins in a small bowl and allow to stand for 1 hour. Then take off the liquid.



When the dough is ready, incorporate raisins and walnuts. Mix all together.



Then divide the dough in half and put it in greased kulich moulds.



Bake kulich at pre-heated oven at 180 C for 45 minutes.

Every year I bake my cakes at Easter, and this year - not without exceptions. Recipe, which I offer you, I was given my grandmother Galina (mother's mom). Since then, she gave it to me, I cook cakes only for its recipes. Cakes are obtained aromatic, soft and airy. If you too are going to bake cakes for Easter, try to bake them in my recipe and you will not be disappointed!

time dough :15-20 minutes
time for raising test: 2 hours
Time Baking: 45 minutes
Makes 2 cakes, each cake for 6-8 servings

Product List:

4 cups flour
½ cup sugar 4 eggs

200 g soft butter

5. Add the olive oil

Once you mix all ingredients together, vymesete dough, cover and place in a warm place to rise for 1 hour.

As will be 1 hour, knead the dough again, cover and let podntsya still within 1 hour.

Cook raisins: Put it in a bowl with the rum. Let sit for 1 hour.

Or you can cover it and put the warm in the microwave for 1 minute.

After discard the liquid and leave the rum-soaked raisins.

Add raisins and nuts into the dough. Mix well.

Lubricate molds for cakes butter.

Put them in batter and bake in preheated oven at 180 degrees for 45 minutes.
