So you sometimes find in the current revenues of crushed apricot. Neither here nor apricot kernels to break your teeth, here's a recipe that may be moving away from tradition, but gives amaretti deliciously soft and sweet.

- 125g ground almonds
- 150g caster sugar
- 2 egg whites
- 20g caster sugar
- a cap orange blossom

What to do
1. Preheat oven to 175 ° C.
2. Mix in a bowl the ground almonds and powdered sugar and set aside for later.
3. Beat the egg whites stiff and when the whisk leaves marks incorporate the sugar and orange blossom.
4. Sprinkle the powder slowly into the whites. With a spatula, mix gently.
5. Place a sheet of parchment paper on baking sheet and form the dough with small domes 3cm at regular intervals.
6. Bake 10 minutes.
Allow to cool. You can eat them! This is my first amaretti, it's really easy to do, and they were perhaps not quite golden for my taste. You can also sprinkle with powdered sugar.
