On my last trip to Sweden, I remained in awe of the extraordinary cake Anika. I mentioned it here saying it would be my next post, and then I moved on to other things ... It was two months ago, already!
I did not ask for the recipe for Anika morotskaka (a cake very common in Sweden). I just accepted the seductive idea: that which is to adorn a simple cake with carrot pearls grenades to make it luxurious desire. Coquetry well ;-) Swedish
To achieve the same result Anika, it was enough to take a good old recipe for carrot cake (also Swedish) and finishes to spend a little more time than usual. I then thought back to this cake with currants and green tea Matcha , also very distinguished, and I thought that both were perfect to restore some luster to the gloom surrounding!
Ingredients
For a cake pan of 23 cm in diameter or a loaf pan about 30 inches long.
* 250 ml of sunflower oil (or other neutral-flavored oil)
* 200 g sugar cane
* 200 g finely grated carrots
* 3 eggs
* 250 g flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 / 2 teaspoon salt
* 1 / 2 teaspoon nutmeg powder
* 1 teaspoon ground cinnamon
* 100 g walnuts coarsely chopped
For the topping:
* 200 g cheese Philadelphia (In Paris, we find at the deli the Bon Marché, in Schwartz's Deli or even in some Italian caterers)
* 100 g icing sugar *
2 teaspoons vanilla sugar
* 1 lime (juice + zest)

1 ~ Beat oil and sugar until they turn white. 2 ~ Add the carrots, then the eggs one by one. 3 ~ In a bowl, combine the remaining ingredients and pour in the preparation. Then add the chopped nuts. 4 ~ Pour into buttered baking pan. 5 ~ Make Bake at 200 ° C for 40-45 min. 6 ~ Cool the cake, then cut the convex top with a large knife to obtain a flat surface. 7 ~ Prepare the topping by mixing all the ingredients to obtain a thick cream and cover cake with this mixture. 8 ~ Fluff grenade in a bowl. Rinse the beans in clear water to remove small fragments of skin and spread on the cream. 9 ~ Keep in refrigerator for the cream is firm.
